Repurposing Thanksgiving and Christmas leftovers is a time-honored tradition in our house. Our favorite leftover turkey recipe is simple: A sandwich featuring turkey, stuffing (pressed to form a thin layer), cranberry sauce and light mayonnaise between two slices of multi-grain bread. But this recipe, provided by Chef Riccardo Ullio of Atlanta’s Fritti Restaurant, is great because it combines two of our favorite things: The holidays, and pizza! Bret worked in pizza restaurants for nearly 8 years– before, during and after college– and our family has “pizza night” once a week. So a leftover turkey recipe for a calzone with peppers to provide the colors of the season is right up our culinary alley. Hope you’ll enjoy it as much as we did!
INGREDIENTS: Leftover turkey (white and dark meat, sans bones) • Fresh bufala mozzarella • ricotta • sliced red and green peppers (optional) • pizza dough • turkey gravy (optional)
DIRECTIONS: Preheat the oven to 550 degrees. • Place the leftover turkey, bufala mozzarella, ricotta and red and green peppers on one side of the stretched dough. • Fold the other dough half over to form the calzone. • Roll dough edges over and pinch with fingers to seal. • Place the calzone in the oven and bake for 6 to 8 minutes (or until the crust is lightly browned). • Once cooled, dress your cheesy, oozing crescent in leftover turkey gravy if desired!
